An Izumo soba shop north of Matsue Castle, serving 100% buckwheat noodles from flour we mill ourselves on stone mills.
Kamiyo Soba marked 73 years in 2026, and we still stone-mill our buckwheat the way the previous generation did.
The buckwheat goes through three stone mills, three times, and is made into 100% buckwheat noodles with no binder. Because the inner husk is milled in, our soba has a grey-green colour.
Izumo soba is meant to be chewed slowly for its firmness and aroma, so wasabi is not part of our standard condiments. Please eat it soon after it arrives – pure buckwheat noodles soften quickly.
